Simon Rimmer and Tim Lovejoy attempt to remove all of the water from their sugar liquids. Stefan Gates adds a small amount of crystals to a sugar liquid to encourage crystal growth. Rimmer and Lovejoy add a seeding crystal solution to their sugar juice and attempt to remove the last of the water.
